Doubles. It’s curried channa (chickpeas) served wrapped up in bara (a flat, soft, fried dough) with shado beni sauce, a boiled mango chutney, tamarind chutney, pepper sauce, cucumbers etc. The ones I tried to make never hit like the ones sold.
If you’re going to try it, use the channa that’s sold dry, the can ones I tried never taste right (or maybe it’s just me)
Tomato egg noodles.
I think one of the cooking stories here had someone who had them in a back alley restaurant and the author waxed poetic about it & I had to see what the hype was about. It’s so simple, flavorful & easy to make and is now a family favorite.

A good breaded cod fish in panko breadcrumbs with thai sauce, along with salad, tomato, concomber, avocado, grated carrot and peanuts with sesame oil
Carbonara. Each home has his own recipe. Ours is like that : we use tagliatelle, smoked bacon, mushrooms, onions, pepper, cream and cheese. Voilà !
